Working my way through this week - the lasagna rocked, the roasted chickpeas ingenious, and the spring rolls were a hit with my teenage son (first time I've ever made them - pretty easy!)

Great! We obviously really like the chickpeas and spring rolls....we have them quite often. :) The chickpeas are so good in a salad with some guac. Yum.

I'm looking forward to spring rolls tomorrow night! :)
